Ingredients
- Two c. Blanched Almond Flour by Nature's Eats
- 1 teaspoon Baking Soda
- 1 tsp Xanthan Gum from Bob's Red Mill
- 2 big Egg Whites, room temp
- 1 tsp Organic Apple Cider Vinegar by Bragg
- 2 tsp Vanilla Extract
- 4 drops Stevita Organic Liquid Stevia (optional)
Intructions
- Start with attracting hwc, butter, eggs + egg whites to room temperature.
- Preheat oven to 350 degrees.
- In medium bowladd first 6 dried ingredients, whisk until blended/no clumps. Put aside.
- In a large mixing bowladd butter and simmer. Beat creamed.
- Insert eggs whites, whisk until well incorporated.
- Subsequently add heavy whipping cream, apple cider vinegar, milk and vanilla stevia. Blend well.
- Add the dry mixture to the wet and mix thoroughly to include.
- By means of a spatula, scoop batter into a gallon ziplock bag (snipping a corner) or piping bag.
- Pipe the batter 2/3 into each greased muffin lining.
- Harness the tray on the counter to release any air bubbles that are trapped.
- Bake every tray for 25 minutes.
Notes:
- Before incorporating the dry into the wet- prep muffin pan with foil liners or silicone muffin liners and non stick spray.
- The batter becomes rather thick, so the longer you allow it to sit.
- Once cleansing, cover with foil when coolingto hold moisture from the cupcakes.
