INGREDIENTS

CUPCAKES:

  1. 1/2 tsp baking powder
  2. 1/8 tsp salt
  3. 1 large egg
  4. 2 tsp vanilla extract
  5. 4 tbsp unsalted butter melted and cooled

VANILLA FROSTING:

  1. Sugar
  2. 3 tbsp unsalted butter at room temperature
  3. 1/4 tsp pure vanilla extract
  4. 1-2 tsp milk that I used whole milk

INSTRUCTIONS

  1. 5 muffin cups place 5 cubes in a muffin pan.
  2. In a small bowl, combine salt, baking powder, and flour. Put aside.
  3. In a large bowlwhisk sugar and the egg for approximately 30 seconds.
  4. Add of the dry ingredients and simmer until blended. Add the milk, and whisk until blended. Add the remaining ingredients and whisk until blended (being careful not to overmix).
  5. Divide the batter equally between 5 muffin cups (each cup will probably be involving 2/3 and 3/4 total ).
  6. Beat sugar and butter . Add 1 tsp of milk and vanilla extract. Beat on medium speed until fluffy and light. If it seems too thin add a bit more powdered sugar if the frosting seems too thick, then add an extra teaspoon of milk.
  7. Frost the cupcakes with a butter knife.
