INGREDIENTS
CUPCAKES:
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 large egg
- 2 tsp vanilla extract
- 4 tbsp unsalted butter melted and cooled
VANILLA FROSTING:
- Sugar
- 3 tbsp unsalted butter at room temperature
- 1/4 tsp pure vanilla extract
- 1-2 tsp milk that I used whole milk
INSTRUCTIONS
- 5 muffin cups place 5 cubes in a muffin pan.
- In a small bowl, combine salt, baking powder, and flour. Put aside.
- In a large bowlwhisk sugar and the egg for approximately 30 seconds.
- Add of the dry ingredients and simmer until blended. Add the milk, and whisk until blended. Add the remaining ingredients and whisk until blended (being careful not to overmix).
- Divide the batter equally between 5 muffin cups (each cup will probably be involving 2/3 and 3/4 total ).
- Beat sugar and butter . Add 1 tsp of milk and vanilla extract. Beat on medium speed until fluffy and light. If it seems too thin add a bit more powdered sugar if the frosting seems too thick, then add an extra teaspoon of milk.
- Frost the cupcakes with a butter knife.
